Raisin Broccoli Salad

Broccoli is a good source of fiber and protein, and contains iron, potassium, calcium, selenium and magnesium as well as the vitamins A, C, E, K and a good array of B vitamins including folic acid. This tree looking vegetable is packed with nutrients, yet low in calories at approximately 31 calories per cup and 2.5 grams of fiber.





Raisins contain good amounts of iron, copper, and vitamins that are essential for making red blood cells and carrying oxygen throughout the body. Raisins contain substantial amounts of beneficial minerals, such as iron, copper, magnesium, and potassium.





Combining these foods make for a high nutrient salad! It tastes great and is great for you!


Recipe


1 large bunch broccoli

7 strips of turkey bacon

1/2 cup raisins

1/4 cup green onion, chopped

2 Tbsp. equivalent artificial sweetener or sugar

1/4 cup low-fat mayonnaise

1 Tablespoon vinegar


Directions


Wash and drain the broccoli; cut florets into bite-size pieces (omit stem).






Prepare bacon, as directed, until crisp. Drain and crumble into small pieces.


In a large bowl combine all ingredients.

Refrigerate 2 hours before serving.


Makes 10- 1 cup servings
