These shrimp are baked lowing the calorie level by not frying. To obtain a crispy texture, coat both sides of shrimp with cooking spray. We made this recently and it was a hit at our house!
Prep Time: 15 minutes Cook Time: 20 minutes Servings: 6
1 pound Shrimp, peeled and deveined
salt taste
ground black pepper to taste
1/3 cup all purpose flour
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
2 large eggs
1/2 cup coconut flakes
1/2 cup bread crumbs
For Dipping Sauce
1/4 cup orange marmalade
1 Tb. chili garlic sauce
1 Tb. rice vinegar
1 teaspoon soy sauce
Directions
Preheat oven to 375 degrees. Line a baking sheet with foil or parchment.
Rinse and pat dry the shrimp. Season all sides of shrimp with paprika, garlic powder, salt, and pepper.
You'll need 3 bowls: In the first bowl, add the flour. In the second owl, whisk eggs. In the third bowl combine coconut flakes and bread crumbs.
Coat shrimp in flour mixture, then dip in egg mixture, then coat the shrimp with the coconut/bread crumb mixture. Place shrimp on prepared baking sheet. Repeat coating process on all the shrimp.
Bake shrimp for about 15-20 minutes or until the crust is golden brown. Shrimp vary in size, so cooking times will vary. If needed, turn the shrimps' for more even coloring after baking for 10 minutes.
For Dipping Sauce: Whisk together all of the dipping sauce ingredients ), chili garlic sauce, rice vinegar, and soy sauce until smooth. Set aside until ready to serve with the coconut shrimp.

I first had spoon bread at Boone Tavern in Berea, Kentucky when I was a student at Berea College. This recipe is delicious and very similar to the Tavern's version!
It only takes about 10 minutes to prepare and 50 minutes to bake.
Spoon Bread
1 cup cornmeal
2 cups cold water
2 tsp. salt
2 or 3 eggs
2 Tb. margarine (I use light)
Preheat oven to 350 degrees.
Mix meal, water and salt. Boil 5 minutes, stirring constantly. Combine milk and eggs. Whisk together. Add a little at a time to hot mixture until combined. Add margarine and stir well.
Pour into a baking dish sprayed with non-stick spray. Bake 50 minutes.
Spoon out and serve with margarine on top.

I made this for my family shortly after finding this post. I was asked to make it again just today. That is a hit (and I'm thankful I could find the recipe again!)
