Christmas Salad

The Holidays are a time folks tend to overindulge on all the goodies and rich meals. It's nice to balance some lighter choices along with the heavier versions. This Christmas Salad is light, fresh and citrusy. The roasted nuts are a nice added crunch and rich roasted flavor. The feta cheese has a tangy, rich and slightly salty flavor. All together, this is a nice meshing of flavors!


We will be including it in our Christmas meal this year. It is easy to make and doesn't take much time.


The color and flavor blend of these ingredients are amazing!





Salad Ingredients


A 12 ounce bag of fresh spring greens

2/3 cup feta cheese

1 can mandarin oranges, you can also use 4 fresh oranges

1 pomegranate, seeded

1/2 cup walnuts or pecans, lightly toasted


In a large bowl add fresh spring greens, feta cheese, mandarin oranges and pomegranates. Right before serving sprinkle on toasted nuts.


*If you make the salad up ahead of time, the nuts will be soggy if left overnight.



Dressing


The dressing I use is a sweet Poppy Seed. An orange dressing would complement this salad nicely, too.

If you don't have time to make the dressing, just pick up your favorite dressing at the grocery.


3/4 cup mayonnaise (I use light mayo)

1/4 cup milk (I use skim milk)

1/4 cup sugar (you can also substitute artificial sugar)

1/4 cup white wine vinegar

2 Tablespoons poppy seeds

1/2 teaspoon dry mustard

Pinch of salt


Combine all ingredients and whisk until smooth. Transfer to a closed container and refrigerate until you are ready to server. A jar with lid works nicely.

Shake well before serving.


*This dressing will keep well in the refrigerator for up to a week. You can make it ahead of time.
